SNOW=Crock Pot

There's nothing I love more than to throw a bunch of ingredients into a crock pot and come back 6-8 hours later and have a meal waiting for me! Love it!

And with all the snow we've been having lately I've been making some crock pot meals.
Have you heard of Gooseberry Patch Cookbooks? They're awesome!!!!

I have a few:

One that I have is a Slow Cooking book and it's great!!!

I'm tring out the following recipe today, it's called Fisherman's Warf Stew

2T. Olive Oil
1 cup leek, sliced
2 cloves garlic, finely chopped
1 cup baby carrots, thinly sliced
6 roma tomatoes, quartered and sliced
1/2 cup green pepper, chopped
1/2 t. fennel seed
1 bay leaf
8 oz. bottle clam juice
1 cup dy white wine or water
1 lb. cod, sliced 1 inch thick and cubed
1/2lb. meduim shrimp, peeled and cleaned
1 t. sugar
1 t. dried basil
1/2 t. salt
1/4 t. hot pepper sauce
2 T. fresh parsley, chopped
Mix oil, leek and garlic in a slow cooker. Add vegetables, fennel seed, bay leaf, clam juice and wine or water: stir. Cover and cook on low setting for 8 to 9 hours, until veggies are tender. About 20 minutes before serving, gently stir in remaining ingredients except parsley. Cover and cook on high setting for 15 to 20 minutes, until fish flakes easily with fork. Discard bay leaf; stir in parsley. Enjoy!
