Valentines Dinner Menu

In an attempt to be frugal, I've planned a nice romantic dinner at home for Valentines Day.....plus this way we won't have to fight the crowds, especially since V-day falls on a Saturday this year.
So here is the menu that I've come up with!

We'll be drinking FatBastard Chardonnay
This wine is great and won't break the bank. It's actually the wine that hubby and I drank the first time he ever cooked me dinner. So it has sentimental meaning.

I'll be making Barefoot Contessa's Roasted Brussel Sprouts! These aren't you mama's mushy sprouts, these bad boys are so yummy and fresh, we love em!

Then I'll be making Giada de Laurentiis' Herb Stuffed Tomatoes I've never made these before but they sound really good!

I'll be whipping up some homeade red skin mashed potatoes as well!

And for the main dish, I got some bourbon and brown sugar soaked salmon from BJ's that we've had before and it's sooooo gooooood!

For dessert I'm making strawberry cupcakes with Cream Cheese frosting! And for an added Valentines touch I'm making the cupcakes in the shape of a heart!

How do I do that? Well all you have to do is place your papers in the cupcake pan and add the batter as you normally would.........then........

After you do that drop a marble or a balled up peice of foil on one side of the paper in between the paper and the pan.....to creat an indent....when the cupcakes cook up you'll have a nice little heart shaped cupcake! Once they're done and cooled just discard the foil or take out the marble. : )
